It might be worth asking them if they plan to offer a split version via their plate resellers, such as us, if that is the way you prefer the information to be presented.

in there own iOS APP (VFRiManual) they split the textdocument up into parts (singe sites out of the long text file) with the texual information for each specific field

No; unfortunately not. It is DFS who have chosen to group this information on airfields into one large textual document instead of publishing individual documents per airfield.

If you're looking up plates for a specific airfield, you would normally use the Plates window, where they simply appear if your route uses that airfield. Or, you can add that airfield to the window.

The document browser is for browsing. It does have a search field at the top, which should work, and a first-letter index down the right-hand side of the table of contents, but if you're just looking for all plates for a particular airfield, the Plates window is probably a better tool for the job.

No you don't. After going into the Document Browser you select DFS German VFR AIP. The Aerodrome Details and Helipad Details pages are then right at the top of the list, before the aerodrome-specific pages.

I believe that document is available in the Document Browser (on iPad). Could you check?

I have the German DFS airport plates subscription. Would it be possible to make
the textual part of the DFS AIP also available? There are operation hours and other things
not available otherwise in the text part.
